So, Saturday night I set out to make this eggplant, sure the due date is not for another few days, but its crunch time baby! It was a lot of fun making this, and by far one of the best meals I have ever made!!!!! I mean this stuff was delicious! I totally out did myself. I thought I was going to have enough to share, but you will draw back a nub!
What is funny is, in my mind as I am eating it, I am thinking the more I eat of this the more likely Jackie will go into labor. I am not sure why I think me eating it will have an effect. Anyway it made for a great dinner last night and an excellent lunch today. We will see what happens from here.

Darby was a Scallini’s eggplant baby. We even got the baby tee shirt after we left the hospital. I love that stuff. MMMMMM good!
